Nutrition and Health, July 23, 2014: Redirecting this Website and Blog to Nutrition and Health, 709:255:01

I’m redirecting this Website and Blog to my fall 2014 Nutrition and Health Course. The purpose of this Blog is three-fold:

  1. To give up-to-date information, including a short outline, on what is being presented in class.
  2. I will put extra explanations and comments on this blog for those who wish to go into a topic in greater detail.
  3. If you wish to ask a question or make a comment, then pose it as a comment on the post for a particular lecture, and I will display it anonymously with the answer. In this way everyone will be able to see the question and the answer.

This Website and Blog were originally developed for the course: Obesity: Biology, Behavior, and Management (709:427). Of course you may go back and read the posts for that class!

Rutgers Students Fight Obesity: Grades are in; Projects to be Promoted to Health Authorities, May 14, 2014

The class is over and all grades have been submitted. The students who took Obesity: Biology, Behavior, and Management this past spring semester (2014) were a fantastic groups of students: Bright, Passionate, Aware, and Excellent Writers! I was so lucky to have this particular group in my class. Most were seniors. Four or five are on their way to their Dietetic Internships; Several are Community Nutritionists: Several are Exercise Science Majors; and a few are not affiliated with Nutrition, but may go on to be in other areas of Heath Care.

Time to Promote Projects to Health Authorities

The semester long class projects (See below) were all fantastic ideas and very practical!   The “Planting the Cure” project would teach kids to grow vegetables and learn about biology. The “Building a Foundation” project should be presented to local hospitals, which the group investigated and found that this program is not currently available. The three “In the Home” projects: “FitKids,” “Physical Activity to Curb Obesity,” and “4 together Keeps Us Better,” are all practical projects. I counseled the “Physical Activity to Curb Obesity” group to commercialize their idea! The two “In the Workplace” projects (“Workplace Wellness” and “P.O.W.E.R.”) were both excellently designed, and again, I counseled these groups to develop companies that would provide these programs to real companies in the US. And finally, the “Lose It to Gain” program is a great idea for Rutgers to provide an over arching health and wellness program for Rutgers students.

As a teacher I couldn’t have asked for a more exciting and thought provoking class. I also wish to thank all of the Rutgers professors who participated in the class this semester. You can see posts on their lectures by viewing earlier posts in this blog.

Good luck to our senior students – they have navigated an excellent but tough University!

Obesity Projects in 2014

Rutgers Students Fight Obesity: Projects from Our Class: Obesity: Biology, Behavior, and Management, April 26, 2014

During this spring semester (2014) the students from the class worked on group projects that were for the purpose of designing a program that would fight obesity in the US. The Projects were presented in class and each one contained fantastic ideas and realistic strategies that would certainly be helpful in the fight against obesity in our country.

Since the class was primarily made up of senior undergraduate students, majoring in Nutritional Sciences (including students in the dietetics program) or Exercise Science, there was ample expertise on nutrition and exercise in each group. In fact, I can honestly say that this group of students was one of the most knowledgeable and passionate about nutrition and health that I have ever encountered. Additionally, on the whole, they were fantastically gifted writers (See their comments for the Posts below) and it was a joy to grade their assignments week after week.

Two of the main take home points from this semester course were:

First, as Dr. Charlotte Markey reviewed in her amazing lecture, the stigma that obese persons (now 1/3 of all of us) feel and the harsh treatment and discrimination that so many are subjected to causes additional problems that make it difficult for them to lead happy, healthy and successful lives

Second, the occupation of dietitian will become one of the most important in the years ahead. Just look at the figures, 1/3 of Americans are obese, and 70% of physicians (most likely many more) say they do not have the training to help obese patients!  What resonates right now is that our society needs well trained dieticians probably more than any other health professional.  How many people are not engaging in the regular health care system because they have been stigmatized to the point of giving up?  The data on this issue are shocking.

Below are the research projects that were developed during this semester. If you wish additional information about any of these, please contact me.
