Tuesday 11-24 – Chapters 12 and 13 – Minerals Lecture – Major and Trace – there could be a whole semester class on minerals – but I will cover the basics in one lecture.  It will be exciting and earth shattering as usual!

After Thanksgiving:

Tuesday 12-1 – Lecture on Diet Assignment & Vitamin supplements – All assignment grades will be in Grade Book by Monday, 11-30 – Have you Diet Assignments available so you can ask questions.  Ask about vitamins and supplements!

Thursday 12-3 – Obesity Explosion Discussion – Are there additional topics needed for the second edition?  Possibly discuss Eating Disorders here!

Tuesday 12-8 – Life Cycle Nutrition Lecture – Nutrition & Breast Feeding – Human milk – Guest Lecture by Marijke Rittmann, RD.

Thursday 12-10 – Review for Final Exam – Not cumulative – so only water and fat soluble vitamins; minerals, diet assignment, Obesity Explosion, and Life Cycle Nutrition questions are covered – in the past students did very well on this exam even before the open book format was used.

Tuesday 12-15255 Final Exam will be on Canvas at 12:00 Noon (given at 3 times as for the first two exams –times to be announced)

Monday Morning Update – Nov 16th 2020

I hope you are all doing well!   The Covid crisis is getting worse – thank goodness Rutgers elected for on-line courses for most classes.

In our class we had Exam 2 last week and the grades in general were quite good.  If you had a problem and could not take the exam, or you had something go wrong during the exam, please email me the next day or two. 

Last Thursday I finished the Water Soluble Vitamins.  On Tuesday (tomorrow) I will Start Fat Soluble Vitamins – Chapter 11 – my favorite area in the course.   

Tomorrow there will be a Poll put on Canvas asking you how you are doing in class and in life in general.  There are 8 questions and it is worth 8 quiz points!   All answers are accepted but you need to take the poll to get points.   It will be anonymous!  But if you have reservations about it you can email Nick (before the end of the quiz) and he will give you the points.  It will be due next Monday at 4 pm. 

The Exercise assignment is due on Thursday, 11-19.  The drop box will remain open after Thursday but you will lose a point or two for being late.

Letter from a Student Concerning the EXERCISE Assignment:

Question:   Fri 11/6/2020 8:33 AM Hello!   My name is ____________ and I had a quick question about the exercise assignment. Last night I started the assignment and I am almost done but I am having a problem with page 5. On page 5, we are supposed to calculate the total kcal burned per week for NEAT activities. I was going to do walking as my NEAT activity but I do not know what number to use for my calculations. I know I have to calculate average kcal/hour and then average kcal/week but what value should I be using for average kcal/hour? On the powerpoint there is a column for walking and my value would be 175 once my BMR is subtracted but it says walking is listed as fast: 15 min/mile. Is this the number I should use or something else? Thank you for your time and I hope you have a great weekend!    Sincerely,

Answer: Fri 11/6/2020 11:10 AM Hi _________,  Thanks for an excellent question.  Yes, use walking for NEAT as it is the activity on the Table that is the lowest.  It is probably the activity that makes up most of the NEAT on a weekly basis.  Joe Dixon

Follow-up: Fri 11/6/2020 12:55 PM Good afternoon, Awesome! I used that value for my NEAT calculations and everything else looks good to me! Everything was very straight forward 🙂 The assignment probably took me about an hour, hour and a half max. However, I did all the calculations on paper first and then typed everything up. I struggled a little with typing on a pdf but that was user error haha. Overall, a very straightforward and educational assignment. Have a good weekend! Respectfully,

Class 20 – Nutrition and Health – Fall 2020 – Nov 10th – EXAM 2 is TODAY!

Exam 2 will be given on Canvas (see quizzes) at the following times:

November 10th –  2:15 to 3:35 pm (All East Coast times – remember   on  Standard time)

November 10th – 8:30 to 9:50 pm

November 11th – 8:30 to 9:50 am

Exam Philosophy – The exam is open book.  You can consult notes if you wish to do so.  My Philosophy is that the material will benefit you and it makes more sense to study the material than to try and cherry pick answers from your notes.  Also, any communication between students around the exam times is not allowed.  By the way, if you consult the Grading Rubric, you will see the exams are only one way you are graded in the class.

Cautions to be very careful about:

1.   Before hand, make plans to take the exam at one of the times listed.  If you can’t make any of the times, email me with your reason.

2.  Do not take the exam at 2 different times.  If you open the exam at 2:15 pm and sign off, even a few minutes later, and then attempt to take the exam later, you will be heavily penalized.   That’s why you should make your plans now. 

3.  I will scramble the exams between the times the exam is given. 

Comments:  I have a very positive attitude about the students in this class.  I have been teaching college for over 28 years.  I have learned over that time to trust students.  If there are students that break the rules, it is to their own detriment.  I won’t let them spoil the class for everyone else.  And I do not believe in using Proctor track, which at this time poses many questions.

Note:  If there are any problems with the Internet or anything else (last time a student dropped her computer during the exam and it shattered!), we can take care of it.  Accidents happen!  Do not panic!
